Thai pork burgers

The most delicious burgers I ever ate! Very tasty meat and the spices matched perfectly. Best to cook on the grill but can be fried also.

Ingredients

  • 400g lean ground pork
  • peel of half lime
  • 1 / 2 sticks of lemon grass (optional)
  • 1 tablespoon finely grated fresh ginger
  • 1 red Thai chili (remove seeds)
  • pinch of sugar
  • 1 tablespoon fish sauce
  • 1-2 large white onions
  • oil
  • cabbage
  • 1 carrot
  • 1 tablespoon mayonnaise
  • 4 hamburger buns
  • 1 teaspoon finely grated fresh ginger

Instructions

Mix the zest, finely chopped lemon grass, ginger, chopped chili, sugar and

fish sauce in a blender, then add to the ground pork and place in

refrigerator for at least 20 minutes.

Clean the onions and finely chop into

rings, mix with 1-2 tablespoons oil in a pan and cook on low heat until

the onion is toasted to a crunch, about 10-15 min.

Place onions on a paper towel.

Form 4 hamburgers from the chilled meat and grill.

Shred the cabbage and carrot into fine strips, and mix with the ginger and

mayonnaise. Put on one half of buns the cabbage mixture, top with the

burgers, sprinkle fried onions, and cover with the other half of a bun and

serve.
